  • 2 Tbsp cooking oil
  • 1 Tbsp fish sauce

Prepare 300g of fresh water spinach. You can get good quality water spinach at a reasonable price from the market. Wash the water spinach thoroughly under running water, then drain it well in a colander. It’s characterized by its hollow stem, similar to bamboo.

Cut the water spinach into bite-sized pieces. If you are serving this to children, it’s recommended to cut them into slightly smaller pieces for easier eating.

Heat 2 tablespoons of cooking oil in a pan over medium heat. Add 1 tablespoon of minced garlic and stir-fry until fragrant. If you love garlic, feel free to use a bit more than 1 tablespoon. Stir-fry the garlic on medium heat to prevent burning.

Once the garlic is fragrant and begins to turn golden, add all the chopped water spinach. It might seem like a lot initially, but it will wilt down to a suitable amount as it cooks. Start stir-frying over high heat, then reduce to medium heat once the water spinach is in the pan.

When the water spinach is slightly wilted, add 1 tablespoon of fish sauce. Using fish sauce available locally in Vietnam will give you the authentic taste.
