A Special Dish: Stir-Fried Sweet Potato Stems with Anchovies from the Garden
This stir-fried sweet potato stem dish, made with fresh vegetables from my garden, is a perfect side for any meal. My husband prepared the sweet potato stems by peeling them, making this dish even more special. Enjoy a delicious meal with this recipe that perfectly balances the crisp texture of the stems with the savory flavor of anchovies!
Ingredients- 150g Sweet potato stems
- 50g Small dried anchovies
- 1 Red chili pepper
- 1 Tbsp Minced garlic
- 1 Tbsp Soy sauce
- 1/2 cup Water
- Cooking oil (soybean oil)
- Sesame seeds
- Sesame oil
- Pinch of coarse salt (for blanching)
Cooking Instructions
Step 1
First, prepare the sweet potato stems by gently scraping off the tough outer skin with a knife or peeling it with your hands. In boiling water with a pinch of coarse salt, blanch the sweet potato stems for 3-5 minutes until they are still crisp. Rinse the blanched stems under cold water, squeeze out any excess moisture, and then cut them into bite-sized pieces, about 5cm long.
Step 2
In a bowl, combine the cut sweet potato stems, minced garlic, and 1 tablespoon of soy sauce. Gently mix them together with your hands to marinate. This pre-seasoning will help the flavors penetrate the stems for a more delicious outcome.
Step 3
Heat a generous amount of cooking oil (soybean oil) in a heated pan over medium-low heat. Add the small dried anchovies and stir-fry until they become crispy, taking care not to burn them. This step helps to remove any fishy smell. Once the anchovies are lightly fried, add the marinated sweet potato stems and pour in 1/2 cup of water. Stir-fry until the liquid is slightly reduced, creating a savory glaze. Add the sliced red chili pepper at this stage for a touch of color and mild spice.
Step 4
Continue stir-frying until all ingredients are well combined. Finally, drizzle in a bit of sesame oil and sprinkle generously with sesame seeds for an enhanced nutty aroma and flavor. Gently toss everything together, and your delicious stir-fried sweet potato stems with anchovies are ready to be enjoyed!
