Whip up a simple potato side dish with common pantry ingredients! Perfect as a side for meals or even a baby snack.
Ingredients for Stir-Fried Shredded Potatoes- 5 medium potatoes
- 1/5 carrot (small size)
- 0.5 Tbsp salt (adjust to taste)
- 2 Tbsp cooking oil
- 2 Tbsp perilla oil
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, peel the potatoes thoroughly. Then, slice them into thin shreds, about 0.3cm thick, suitable for your child to eat.
Step 2
Rinse the shredded potatoes under running water 2-3 times. This step removes excess starch, preventing them from sticking together and ensuring a cleaner texture when stir-fried. After rinsing, soak the shredded potatoes in cold water for about 10 minutes to further remove starch.
Step 3
While the potatoes are soaking, finely julienne the carrot into strips similar in thickness to the potatoes. Adding carrots not only enhances the dish’s color but also boosts its nutritional value.
Step 4
Heat a pan over high heat without any oil. Add only the drained shredded potatoes and stir-fry. This step helps to evaporate any remaining moisture from the potatoes, preventing them from becoming mushy or clumpy during cooking.

After stir-frying for about 2 minutes to dry out the potatoes, add 2 tablespoons of cooking oil and continue to stir-fry, ensuring the potatoes are evenly coated. The oil will coat the potato shreds, making them more flavorful and creating a delightful texture.

Once the potatoes start to soften slightly, add 0.5 tablespoon of salt for initial seasoning. Avoid adding too much salt at this stage; you can always adjust it later to your preference.

With the cooking oil and salt added, continue to stir-fry the potatoes over high heat for about 5 more minutes. When the potatoes become somewhat translucent and tender, add the julienned carrots and stir-fry together.

Add the carrots and cook for another 3-5 minutes until both the potatoes and carrots are tender and cooked through. Finally, drizzle in 2 tablespoons of perilla oil for a nutty aroma and stir-fry for just 1 more minute. Turn off the heat and sprinkle with sesame seeds to finish your delicious stir-fried shredded potatoes!
Step 9
Serve the freshly stir-fried shredded potatoes in a nice dish for a wonderful meal accompaniment. They are also great for lunchboxes once cooled.
