Simple and Tasty Stir-Fried Potato Noodles Recipe
I made stir-fried potato noodles because potatoes were affordable. This dish is a perfect side dish for rice, easy to make, and incredibly satisfying!
Main Ingredients- 3 medium potatoes
- Small amount of carrot
- 1/2 onion
Cooking Instructions
Step 1
First, thoroughly wash and peel the potatoes. Then, julienne them into thin strips, about 0.3cm thick. Cutting them too thick will make them take longer to cook, and too thin will cause them to break apart, so an appropriate thickness is key. Soak the julienned potatoes in cold water for about 10 minutes to remove excess starch. This step prevents the potato strips from sticking together and becoming mushy when stir-fried, resulting in a cleaner dish.
Step 2
Julienne the carrot and onion into similar thickness as the potatoes. The julienned carrots add a beautiful color to the dish, enhancing its visual appeal. The onion contributes a natural sweetness, boosting the overall savory flavor.
Step 3
Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the julienned carrots first and stir-fry for about 1 minute until their color becomes vibrant. Stir-frying the carrots beforehand infuses the oil with their flavor, leading to a more delicious final dish.
Step 4
Once the carrots are slightly softened, add the drained potato strips and continue to stir-fry. It’s important to stir frequently to prevent the potatoes from sticking to the pan. The potatoes are nearly cooked when they start to turn translucent.
Step 5
After stir-frying the potatoes for about 3 minutes and they are partially cooked, add the prepared onion. Stir-fry until the onion becomes translucent. At this stage, season with a pinch of black pepper and 1 teaspoon of salt. You can adjust the amount of salt according to the quantity of potatoes and your personal preference.
Step 6
Continue to stir-fry for another 2-3 minutes, allowing all the ingredients to meld together. The total stir-frying time should be around 8-10 minutes. Taste the potatoes to ensure they are fully cooked and the seasoning is balanced. Add a little more salt if needed. Be careful not to overcook, as the potatoes can become mushy.
Step 7
Once perfectly stir-fried, transfer the potato noodles to a storage container to complete the dish! It’s delicious served hot, or you can let it cool to enjoy as a side dish. A drop of sesame oil at the end can add an extra layer of nutty aroma.
