Main Ingredients

  • 500g garlic scapes

Magic Seasoning Mix

  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp maesil-cheong (plum extract)
  • 1 Tbsp toasted sesame seeds
  • 0.5 Tbsp sesame oil
  • 1 tsp salt (or can substitute with soy sauce)

Cooking Instructions

Step 1

First, trim any wilted or unsightly parts of the garlic scapes. Wash them thoroughly under running water, shake off excess moisture, and then cut them into bite-sized pieces, about 3-4cm long.

Boil about 800ml of water in a pot. Once the water is boiling, add 0.5 Tbsp of salt and the prepared garlic scapes.

The key to keeping the garlic scapes crispy! Blanch the garlic scapes in the boiling water for just about 10 seconds. Be careful not to overcook, or they will become mushy! Immediately remove the blanched garlic scapes, rinse them under cold water, and drain thoroughly in a colander.

Place the drained garlic scapes in a large bowl. Add the seasoning ingredients: 2 Tbsp maesil-cheong, 1.5 Tbsp gochugaru, and 2 Tbsp gochujang. Gently mix them with your hands until the seasoning evenly coats the garlic scapes. Be sure to mix gently so the scapes don’t break.

Finally, add 1 tsp of salt to adjust the seasoning to your taste. (You can substitute with soy sauce if you prefer.) For a nutty aroma, add 1 Tbsp of toasted sesame seeds and 0.5 Tbsp of sesame oil, and toss lightly one more time. Your delicious stir-fried garlic scapes are ready! You can eat them right away, or let them sit for a bit to let the flavors meld.
