Fridge Clean-Out! Super Simple Soybean Sprout Side Dish Recipe
This is a super simple soybean sprout side dish made using leftover vegetables from your fridge. Its crisp texture and savory flavor are perfect with rice! This is a lifesaver side dish that even those living alone or busy office workers can whip up in 10 minutes. Be sure to follow along!
Main Ingredients- 1 bag of soybean sprouts (approx. 300g)
- 1/4 carrot
- 1 king oyster mushroom
Seasoning- 1/2 Tbsp salt
- 1 Tbsp sesame oil
- A pinch of sesame seeds
- 1/2 Tbsp salt

Cooking Instructions
Step 1
First, prepare the carrot and king oyster mushroom that have been stored in your fridge. It’s good to check the condition of the carrot to make sure it’s not too dry. (If the carrot is a bit dry, rinsing it briefly under running water can help revive its freshness.)
Step 2
Rinse the soybean sprouts thoroughly under running water. Place the washed sprouts in a pot and add only half a cup of water (about 100ml). If there’s too much water, the sprouts will release a lot of moisture, reducing their crispiness, so using the right amount is important.
Step 3
Cover the pot and cook over medium heat. Once steam starts rising from the sprouts and they begin to bubble, reduce the heat to low. Delicious aromas will start to fill the air as the sprouts cook.
Step 4
While the soybean sprouts are cooking, thinly julienne the prepared carrot and king oyster mushroom. Cutting them into thin strips, rather than thick pieces, will help them blend well with the sprouts and cook in a similar amount of time.
Step 5
Once the soybean sprouts are cooked to your liking, add the prepared salt and sesame oil to the boiling sprouts to season them. Then, add the julienned carrot and king oyster mushroom. Gently toss to combine without mashing the sprouts, and stir-fry for another 1-2 minutes until the seasonings are evenly distributed. The key is to stir-fry gently so the ingredients mix well.
Step 6
Instead of the hassle of cooking the soybean sprouts separately and draining them in a colander, add the other vegetables directly to the hot water the sprouts were cooked in and stir-fry. This way, the savory flavor of the soybean sprouts and the vegetables will meld together, creating an even more flavorful side dish. The tip for this recipe is to utilize the cooking water instead of discarding it!
Step 7
Even the slightly dry carrot regained its crispiness by absorbing moisture during the stir-frying process! Finally, sprinkle some sesame seeds on top for a nutty aroma, and your delicious soybean sprout side dish is complete. It’s also incredibly tasty served over warm rice and mixed in!
