How to Make the Perfect Seasoned Korean Zucchini (Nogaek Muchim)
This is my version of ‘Nogaek Muchim,’ a refreshing Korean zucchini salad, inspired by the one my mother made last year. The unique texture and flavor of Nogaek (a type of large Korean zucchini) are truly unforgettable. This recipe is simple to make with basic seasonings, making it a perfect side dish for rice or even a delightful appetizer. It’s especially wonderful on hot summer days when you’ve lost your appetite. Let me share this fantastic recipe with you!
Key Ingredients- 1 fresh Nogaek (Korean large zucchini)
- A pinch of coarse salt (for salting the zucchini)
Cooking Instructions
Step 1
First, wash the Nogaek thoroughly. Then, use a knife to peel off the skin thinly. Trim off both ends of the Nogaek, cut it in half lengthwise, and then use a spoon to scrape out the seeds. This is a very easy way to remove them! Once the seeds are removed, slice the Nogaek diagonally into bite-sized pieces, about 0.5 cm thick. Slicing them not too thinly will help maintain their crispiness.
Step 2
Sprinkle a pinch of coarse salt evenly over the sliced Nogaek. This process draws out excess moisture, making the zucchini crisper and also helps to remove any bitterness. Let it sit for about 10-15 minutes until the Nogaek softens slightly.
Step 3
While the Nogaek is salting, prepare the seasoning. Finely chop the green onions. In a bowl, combine 1 tsp of minced garlic, 1 Tbsp of gochugaru, 2 Tbsp of gochujang, 1 Tbsp of sesame oil, 1 Tbsp of fish sauce, and 1 Tbsp of plum extract. Mix well to create a delicious seasoning paste. You can adjust the sweetness by adding more or less plum extract.
Step 4
After salting, rinse the Nogaek lightly under running water and then squeeze out as much water as possible. Squeeze firmly with your hands or a spoon to ensure no excess water remains, which will help the seasoning adhere well.
Step 5
Add the prepared seasoning paste to the squeezed Nogaek. Also, add the chopped green onions and a generous amount of toasted sesame seeds. The sesame seeds will add a wonderful nutty aroma.
Step 6
Now, gently mix everything together with your hands. Be careful not to overmix or mash the Nogaek; you want to combine the ingredients gently so the seasoning is evenly distributed while preserving the crisp texture. Toss well to create a delicious salad.
