  • 180g bean sprouts
  • 0.5 Tbsp coarse salt (for blanching)
  • 1 handful chopped green onions
  • 0.5 Tbsp minced garlic
  • 0.5 Tbsp tuna extract (or fish sauce)
  • 2 pinches salt (for seasoning)
  • 1 Tbsp sesame oil
  • 1 tsp toasted sesame seeds

Cooking Instructions

Step 1

First, thoroughly wash 180g of bean sprouts under running water. If the ends of the bean sprouts are dirty, you can trim them slightly. After washing, drain the bean sprouts in a colander.

Boil plenty of water in a pot. Once boiling, add 0.5 Tbsp of coarse salt. When the salt dissolves, add the prepared bean sprouts and blanch for just 3-4 minutes. Be careful not to overcook them, as they will become mushy.

Immediately drain the blanched bean sprouts in a colander and rinse them quickly under cold running water. This step is crucial for maintaining the crisp texture of the bean sprouts.

Transfer the completely drained bean sprouts to a bowl. Add 1 handful of chopped green onions to the bowl.

Now it’s time for the seasonings. Add 0.5 Tbsp of minced garlic and 0.5 Tbsp of tuna extract. If you don’t have tuna extract, fish sauce can be a good substitute. Taste and adjust the seasoning with salt as needed. I usually add about 2 pinches of salt.

Finally, add 1 tsp of toasted sesame seeds and 1 Tbsp of sesame oil for a nutty aroma.
