Main Ingredients

  • 1 medium-sized salted radish (jjanmu)
  • A little chopped green onion (about 1 Tbsp)

Seasoning

  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Tbsp minced garlic
  • 2 Tbsp Maesil extract (plum syrup)
  • 2 Tbsp sesame oil (perilla oil)
  • A little toasted sesame seeds

Cooking Instructions

Step 1

First, it’s important to remove some of the saltiness from the salted radish. Rinse the jjanmu thoroughly, then slice it into bite-sized pieces, about 0.5cm thick strips. Place the sliced jjanmu in cold water for about 15-20 minutes to gently reduce its saltiness. It’s even better if you change the water once during this time.

Drain the water from the jjanmu using a sieve. If there’s too much moisture, the salad can become bland. Gently squeezing the radish with your hands to remove excess water is also a good option. Now, let’s start mixing the seasonings into the prepared jjanmu. First, add 2 tablespoons of gochugaru for a bit of spiciness.

Next, add 1/2 tablespoon of minced garlic to enhance the flavor of the dish. The pungent aroma of garlic will complement the savory taste of the jjanmu, creating a delicious salad.

Add 2 tablespoons of maesil extract (plum syrup) for sweetness and a nice sheen. Maesil extract can be used instead of sugar to provide a healthier and deeper sweetness. It pairs well with the salty flavor of the jjanmu.
