Essential Ingredients- 2 medium potatoes
- 1 strip of bacon
- 3 tablespoons all-purpose flour
- Pinch of salt
- Pinch of black pepper
- 2 tablespoons shredded mozzarella cheese
- Pinch of dried parsley
Optional Ingredients- 1 egg
- 1 egg
Cooking Instructions
Step 1
First, wash the potatoes thoroughly, peel them, and then grate them into thin julienne strips. Using a mandoline slicer will help you achieve uniform strips.
Step 2
In a bowl, season the julienned potatoes with a pinch of salt and pepper. Then, add the 3 tablespoons of all-purpose flour and mix well until it forms a cohesive mixture, almost like a batter. The flour will help absorb some moisture, leading to a crispier Rosti.
Step 3
Preheat a medium-sized non-stick skillet over medium heat. Add the strip of bacon and cook until it’s nice and crispy and has rendered its fat. Transfer the cooked bacon to a paper towel-lined plate to drain any excess grease, then finely chop it. Set aside.
Step 4
Add a generous amount of olive oil to the same skillet and heat it over medium-low heat. Carefully spread the potato mixture evenly into the skillet, forming a large pancake shape. Cook for about 5-7 minutes on one side, or until golden brown and crispy.
Step 5
Once the bottom is golden and crisp, carefully flip the Rosti using a spatula. Sprinkle the 2 tablespoons of mozzarella cheese and the chopped bacon evenly over the cooked side. Add a pinch of dried parsley. Continue to cook for another 3-5 minutes, or until the cheese is melted and the other side is also golden brown and crispy. Your delicious Rosti is ready! For an even more satisfying meal, consider serving it with a fried egg on top.
