Main Ingredients- 1/2 medium radish
- 3-4 stalks of green onion

Step 1
First, peel the radish thoroughly. Then, julienne it into thin strips, about 0.3cm thick. Cutting thinly helps the seasoning penetrate well and improves the texture.

In a bowl with the julienned radish, add 2 Tbsp of salt, 1 Tbsp of sugar, and 3 Tbsp of water for brining. Mix evenly. Brining this way removes the radish’s pungent flavor and enhances its crispiness. Let it brine for about 10 minutes.

About halfway through the brining process (around 5 minutes), gently toss the radish to ensure the seasoning is distributed evenly.

After brining, drain the radish in a colander. Then, squeeze out as much excess water as possible by hand. It’s crucial to remove most of the moisture, as too much water can make the finished salad watery and dilute the flavor.

To the squeezed radish, add 1/2 Tbsp of minced garlic and 1/2 Tbsp of sugar (adjusting the total sugar to 1.5 Tbsp by combining with the previously added sugar). If the radish still tastes pungent, you can add a little more sugar.

Now, add the fine chili powder (optional) to enhance the radish’s vibrant color. If you don’t have fine chili powder, regular chili powder will also work. Gently mix the ingredients with your hands, ensuring the seasoning coats the radish well.
