  • 2 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp minced garlic
  • 1 tsp MSG (optional, for enhanced flavor)
  • 1 tsp toasted sesame seeds
  • 1 tsp salt (adjust to taste)
  • 1 Tbsp sugar (adjust sweetness)

First, prepare half of the radish. Wash the skin thoroughly, then thinly and evenly julienne it using a mandoline slicer or a knife. Slicing it thinly helps the seasoning penetrate well and improves the texture.

Add all the prepared seasoning ingredients: 3 Tbsp gochugaru, 2 Tbsp fish sauce, 1 Tbsp minced garlic, 1 tsp MSG (optional), 1 tsp toasted sesame seeds, 1 tsp salt, and 1 Tbsp sugar. It might seem like there isn’t enough seasoning at first, but that’s okay. Gently mix everything with your hands to ensure the seasoning coats the radish evenly.
