Now it’s time to prepare the oil for frying. In a deep pot, such as one used for cooking ramen, pour in about 2 cups of cooking oil. It’s important to have enough oil so the chicken pieces can be fully submerged and move freely. While the oil is initially cold, it will gradually heat up to the perfect frying temperature.

Here’s a simple trick to check the oil temperature: gently place a wooden chopstick into the oil. If small bubbles start to form around the chopstick and rise like tiny threads, the oil is at the ideal frying temperature, approximately 180°C (350°F). If the oil is too cool, the chicken will be greasy, and if it’s too hot, it will burn on the outside before cooking through. Make sure to use this method!

Putting ingredients directly into hot oil can cause dangerous splattering. To avoid this, scoop some popcorn chicken onto a spoon or ladle. Carefully bring it to the edge of the pot and gently lower the chicken pieces into the oil. This method ensures safe and effective frying.
