Let’s make these delightfully crunchy onion pickles, a perfect match for grilled meats and other savory dishes.
Main Ingredients- 3 medium onions
- 4 Korean green chilies (Cheongyang peppers)
Cooking Instructions
Step 1
Let’s start making these delicious onion and chili pickles, offering a satisfying crunch and cutting through the richness of meat. They’ll be a wonderful staple side dish for your summer meals.
Step 2
Time to prepare the pickling marinade. In a saucepan, combine 1/2 cup each of soy sauce, vinegar, sugar, and water. (Ratio: Soy Sauce:Vinegar:Sugar:Water = 1:1:1:1). Bring this mixture to a boil over medium-high heat, stirring until the sugar is dissolved. Once it boils, turn off the heat and let it cool slightly. Don’t worry if the sugar isn’t fully dissolved at first; it will dissolve completely later.
Step 3
Peel the onions and wash them thoroughly. Cut them into quarters or bite-sized pieces. Wash the Korean green chilies, remove the stems, and slice them diagonally. Place the prepared onions and chilies into a clean glass jar or an airtight container.
Step 4
Pour the cooled pickling marinade over the sliced onions and chilies in the container. Gently shake the container or press down the ingredients to ensure the marinade evenly coats everything. Let it sit at room temperature for about half a day, then store it in the refrigerator. The flavor will deepen and become even more delicious as it marinates!
