Kkulcheo’s Signature Crispy Oiji Muchim Recipe
Hello everyone, it’s Kkulcheo~♡ Today, we’re making a delightful Oiji Muchim with a wonderfully chewy and crunchy texture! When you don’t have an appetite or are short on side dishes, this one dish is all you need. Let’s get cooking right away! ♡
Main Ingredients- 3 Oiji (Korean pickled cucumbers)
- 1 Cheongyang chili pepper
- 1/2 Red chili pepper
- 1/3 Green onion stalk
- 3 cloves Garlic
Seasoning- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Fish sauce (e.g., Kkanari or anchovy)
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- 1 Tbsp Sugar (or corn syrup)
- 1 Tbsp Maesilcheong (Plum extract syrup)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Fish sauce (e.g., Kkanari or anchovy)
- 1 Tbsp Sesame oil
- 1 Tbsp Toasted sesame seeds
- 1 Tbsp Sugar (or corn syrup)
- 1 Tbsp Maesilcheong (Plum extract syrup)
Cooking Instructions
Step 1
First, thoroughly wash the 3 Oiji cucumbers.
Step 2
If you prefer a chewier texture, slice the cucumbers not too thinly. Place the sliced cucumbers in cold water and soak them for 10 to 15 minutes to remove excess saltiness. This step also helps to remove any bitterness.
Step 3
Finely mince the 3 cloves of garlic. Slice the Cheongyang chili pepper and red chili pepper thinly on an angle, removing the seeds. Slice the green onion stalk diagonally, using both the white and green parts. In a separate bowl, combine all the seasoning ingredients: 2 Tbsp Gochugaru, 1 Tbsp fish sauce, 1 Tbsp Maesilcheong, 1 Tbsp sesame oil, 1 Tbsp sugar (or corn syrup), and 1 Tbsp toasted sesame seeds. Mix well to create the seasoning paste.
Step 4
Taste one slice of the Oiji. If it’s not too salty, squeeze out as much water as possible. Pressing them firmly by hand will help remove more liquid, allowing the seasoning to penetrate better and improving the texture.
Step 5
Add the pre-made seasoning paste to the squeezed Oiji and gently mix everything together with your hands until well combined. Ensure the seasoning is evenly distributed throughout the cucumber slices.
Step 6
Voila! Your wonderfully crispy and delicious Oiji Muchim is ready. On hot days when your appetite is low, imagine eating this with a bowl of rice mixed with cold water – it’s incredibly delicious! Just thinking about it makes my mouth water. ♡
