Then, add 1/2 thinly sliced onion and 2 king oyster mushrooms cut into bite-sized pieces. Sauté until the onions become translucent and the mushrooms are lightly browned. It’s important to cook them together so the sweetness of the onion and the umami of the mushrooms meld well.

Once the onions and mushrooms are somewhat sautéed, add 6 baby bok choy that have been prepped. Trim the tough ends of the bok choy, wash them thoroughly, and cut them into 2-3 manageable pieces. Be careful not to stir too vigorously, as this can break the bok choy apart.
