Main Ingredients- 5 stalks fresh garlic scapes
- Pinch of salt (for blanching)
Seasoning Ingredients- 1 tsp homemade miso paste (rich and savory)
- 2 tsp soy sauce for soup (for depth of flavor)
- 1 tsp oligosaccharide (for a touch of sweetness)
- 1/2 Tbsp toasted sesame seeds (for nutty aroma)
- 1 tsp roasted soybean powder (for enhanced flavor)
- 1/2 Tbsp sesame oil (for fragrance)
- 1 tsp homemade miso paste (rich and savory)
- 2 tsp soy sauce for soup (for depth of flavor)
- 1 tsp oligosaccharide (for a touch of sweetness)
- 1/2 Tbsp toasted sesame seeds (for nutty aroma)
- 1 tsp roasted soybean powder (for enhanced flavor)
- 1/2 Tbsp sesame oil (for fragrance)
Cooking Instructions
Step 1
First, thoroughly wash the garlic scapes and trim off any tough ends. Then, cut them into bite-sized pieces, about 4 cm (1.5 inches) long. Cutting them to this length makes them easier to eat.
Step 2
Place the cut garlic scapes in a steamer basket and sprinkle with a pinch of salt. Steam over high heat for 3 minutes. This step helps to remove any raw spiciness or pungency from the garlic scapes, resulting in a much tender and pleasant flavor. (You can skip this step and use them raw, but steaming is recommended for a milder taste.)
Step 3
In a small bowl, combine 1 tsp of miso paste, 2 tsp of soy sauce for soup, 1 tsp of oligosaccharide, and 1/2 Tbsp of toasted sesame seeds. Mix well with a spoon to create the seasoning sauce. Adjust the amount of soy sauce based on the saltiness of your miso paste.
Step 4
Carefully remove the steamed garlic scapes from the steamer and let them cool slightly for a minute or two. Avoid mixing while they are piping hot, as they might become mushy. Transfer the slightly cooled scapes to the bowl with the seasoning.
Step 5
Gently toss the garlic scapes with the prepared seasoning sauce. Make sure to coat every piece evenly with the delicious marinade. Use a gentle hand to avoid breaking the scapes.
Step 6
Once the garlic scapes are well-coated with the sauce, sprinkle in 1 tsp of roasted soybean powder. Mix lightly again. The soybean powder adds a wonderfully savory and deep flavor profile to the dish.
Step 7
Finally, drizzle in 1/2 Tbsp of fragrant sesame oil and give it one last gentle toss to finish. Your delicious garlic scape miso salad is ready! You can enjoy it immediately, or chill it in the refrigerator for a refreshing treat.
