Main Ingredients- 300g Sundae (use steamed or boiled sundae according to your preference)
- 1 cup Frying mix (based on a 200ml measuring cup)
- 130ml Water (use cold water)
Sweet & Spicy Sauce- 1 Tbsp Gochujang (Korean chili paste, approx. 25g)
- 1/2 Tbsp Gochugaru (Korean chili flakes, approx. 3g)
- 2 Tbsp Ketchup (approx. 20g)
- 1 Tbsp Sugar (approx. 10g)
- 2 Tbsp Corn syrup or Oligosaccharide (approx. 20g)
- A pinch of Black pepper
- 1/2 Tbsp Minced garlic (approx. 5g)
- 3 Tbsp Water (approx. 25ml)
- 1 Tbsp Gochujang (Korean chili paste, approx. 25g)
- 1/2 Tbsp Gochugaru (Korean chili flakes, approx. 3g)
- 2 Tbsp Ketchup (approx. 20g)
- 1 Tbsp Sugar (approx. 10g)
- 2 Tbsp Corn syrup or Oligosaccharide (approx. 20g)
- A pinch of Black pepper
- 1/2 Tbsp Minced garlic (approx. 5g)
- 3 Tbsp Water (approx. 25ml)
Cooking Instructions
Step 1
First, let’s make the batter. In a bowl, combine 1 cup of frying mix with 130ml of cold water. Whisk well until there are no lumps. The batter should be neither too thin nor too thick – it should flow smoothly when lifted with a chopstick.
Step 2
Cut the sundae into bite-sized pieces. Lightly dust the cut sundae with a bit of dry frying mix (or flour). This step helps the batter adhere better. Then, coat each piece evenly with the prepared batter, ready for frying.
Step 3
Now it’s time to fry! Heat oil for deep frying to about 170-180°C (340-355°F). You can test the temperature by dropping a small amount of batter; it should sizzle and float immediately. Carefully add the battered sundae pieces to the hot oil. Fry for about 3-5 minutes until golden brown and crispy. Avoid overcrowding the pot, as this can lower the oil temperature and result in soggy fries. Fry in batches if necessary.
Step 4
While the sundae is frying, let’s prepare the delicious sauce. In a pan, combine 1 Tbsp gochujang, 1/2 Tbsp gochugaru, 2 Tbsp ketchup, 1 Tbsp sugar, 2 Tbsp corn syrup, a pinch of black pepper, 1/2 Tbsp minced garlic, and 3 Tbsp water. Mix everything well. Bring the mixture to a simmer over medium heat, then reduce to low heat and cook for 1-2 minutes, stirring occasionally, until the sauce thickens slightly. Your flavorful sauce is now ready!
Step 5
Arrange the crispy fried sundae attractively on a serving plate. Generously drizzle the warm, sweet and spicy sauce over the top. Your homemade snack bar-style fried sundae is complete! It’s best enjoyed immediately while warm.
