How to Make Delicious Dried Shrimp Stir-Fry: A Perfect Side Dish Recipe
Our household usually prefers making small portions of side dishes to enjoy them fresh. Today, I’ve made a ‘Dried Shrimp Stir-Fry’ that doesn’t spoil easily and can be stored for a long time – it’s a real rice thief! Its savory yet sweet flavor is exquisite, making it perfect as a snack for kids or an appetizer for adults!
Ingredients
- 50g dried shrimp (about one handful)
- 2 Tbsp olive oil
- 1 Tbsp oligosaccharide
- 0.7 Tbsp brown sugar (approx. 2/3 Tbsp)
- 1 Tbsp cooking wine (Mirin)
- 1 Tbsp gochujang (red chili paste)
- 0.3 Tbsp minced garlic (approx. 1/3 tsp)
- 1 Tbsp ketchup
- A pinch of sesame seeds
Cooking Instructions
Step 1
It’s important to check the condition of your dried shrimp. If they feel slightly moist or aren’t crispy to the touch, place them in a dry, preheated pan over medium-low heat and toast them without adding anything. This step will help restore their crispiness. After toasting, transfer the dried shrimp to a separate bowl and wipe the pan clean with a paper towel.
Step 2
Pour 2 tablespoons of olive oil into the stir-fry pan. Olive oil adds flavor to the dried shrimp and prevents the sauce from burning.
Step 3
Add 1 tablespoon of cooking wine (Mirin) to neutralize any fishy smell and enhance umami.

Add 0.7 tablespoons (about 2/3 Tbsp) of brown sugar for sweetness. Using brown sugar adds a deeper sweetness.

Stir in 1 tablespoon of oligosaccharide for shine and a smoother sweetness.

Add 1 tablespoon of ketchup for a tangy and sweet flavor. Ketchup gives the dried shrimp stir-fry a unique taste.

Include 1 tablespoon of gochujang (red chili paste) for spiciness and depth of flavor. The amount of gochujang can be adjusted to control the heat level.

Add 0.3 tablespoons (about 1/3 tsp) of minced garlic to introduce a mild garlicky aroma. If you prefer a stronger garlic flavor, feel free to add a little more.

Now, reduce the heat to medium-low. Using a spoon or spatula, stir all the sauce ingredients thoroughly until well combined and smooth, ensuring there are no lumps. It’s crucial to mix the sauce until it’s smooth and evenly distributed.

Once the sauce is heated through and starts to gently bubble, taste it. If it feels too bland, add 1-2 pinches of salt to adjust the seasoning. If it needs more sweetness, add a little more sugar to reach your desired level.

When the sauce is simmering nicely, add the prepared dried shrimp and immediately turn off the heat. Quickly toss the dried shrimp to coat them evenly with the sauce using the residual heat. Cooking with residual heat prevents the shrimp from becoming too hard or burning.
