  • 1/2 onion
  • A little red chili pepper
  • 1 Korean green chili pepper

Seasoning

  • 0.5 Tbsp fish sauce (Kkanari Aekjeot)
  • 2 Tbsp red chili flakes (Gochugaru)
  • 0.5 Tbsp minced garlic
  • 1 Tbsp sesame oil
  • A pinch of roasted salt (or regular salt)
  • A pinch of sesame seeds

Cooking Instructions

Prepare 1 cucumber. Peel it partially with a peeler for a better appearance and texture. Slice the cucumber in half lengthwise, then diagonally into about 0.5cm thick pieces. Cutting them slightly thicker will help maintain their crispiness.

Peel and thinly julienne the 1/2 onion. Remove the stems from the red and green chili peppers, remove the seeds, and slice them diagonally to a similar thickness as the cucumber. If you prefer a spicier kick, increase the amount of green chili pepper. Use red chili pepper for added color.

Now, it’s time to mix all the seasoning ingredients. Combine 0.5 Tbsp of fish sauce, 2 Tbsp of red chili flakes, 0.5 Tbsp of minced garlic, and 1 Tbsp of sesame oil in a bowl. Add a pinch of roasted salt to start, and adjust to your taste, as it’s better to add more salt gradually. You can also use regular salt. Add a pinch of sesame seeds for a nutty aroma.
