Pancake Batter Ingredients- 3 Tbsp All-purpose flour
- 2 cups Water (approx. 400ml)
- 8 Tbsp Pancake mix
- 1 bunch Chives (approx. 100g)
- A little Carrot (for color)
- 1/2 Onion
- A pinch of Black pepper
Super Simple Dipping Sauce- 5 Tbsp Pickled vegetable brine (or 2:1:1 ratio of soy sauce, vinegar, sugar)
- A pinch of Chili flakes
- A pinch of Toasted sesame seeds
- 5 Tbsp Pickled vegetable brine (or 2:1:1 ratio of soy sauce, vinegar, sugar)

Cooking Instructions
Step 1
The secret to making your chive pancakes extra crispy and tender! It’s adding all-purpose flour. If you only use pancake mix or tempura powder, the pancake can become a bit stiff when it cools down. Mixing pancake mix and all-purpose flour in a ratio of about 8:3 creates a fantastic texture that’s crispy on the outside and moist on the inside. This recipe uses 8 tablespoons of pancake mix and 3 tablespoons of all-purpose flour as a base.
Step 2
In a large bowl, combine 8 tablespoons of pancake mix and 3 tablespoons of all-purpose flour. Gradually add about 2 cups (approx. 400ml) of water while whisking to dissolve any lumps, creating a smooth batter. Pancake mix usually has some seasoning, and since we’ll be dipping it in a sauce later, you don’t need to add extra salt to the batter.
Step 3
Wash the chives thoroughly and pat them completely dry. Then, chop them into segments about 3-4 cm long. Thinly julienne a small amount of carrot for color, and thinly slice the onion as well. Add the prepared vegetables to the batter, sprinkle with a pinch of black pepper, and mix everything evenly. Your delicious chive pancake batter is now ready!

Just like the batter, the ‘cooking technique’ is crucial for making a delicious pancake. To achieve a crispy pancake, it’s essential to use a generous amount of oil. If there’s not enough oil, the pancake can burn or become soggy.

Heat a frying pan over medium-high heat and add a generous amount of cooking oil. Reduce the heat to low, then ladle about a portion of the chive batter onto the pan and spread it thinly. After spreading the batter thinly, increase the heat to medium.
