This is a special and delicious celery jangajji pickle where the characteristic aroma of celery disappears, leaving only its wonderfully crisp and chewy texture. It’s great as a side dish for meals or to refresh your palate after eating rich, greasy foods!
Main Ingredients- 400g fresh celery sticks
- 5-7 Cheongyang chili peppers (for a touch of heat)
Golden Ratio Seasoning Ingredients- 10 Tbsp soy sauce (using a large Korean serving spoon)
- 10 Tbsp white sugar (adjust sweetness to your preference!)
- 10 Tbsp rice vinegar (or substitute with lemon juice for acidity)

Cooking Instructions
Step 1
First, thoroughly wash the celery sticks under cold running water several times to ensure there’s no dirt or debris.

Cut the washed celery into bite-sized pieces. Slicing them to about half the width of your fingernail, rather than too thin, will enhance their crisp texture.

The Cheongyang chili peppers are used to add a pleasant spiciness, so cut them into large pieces, about 2-3 sections, to allow their flavor to infuse well. Removing the seeds will make them less spicy.
Step 4
Now, let’s make the delicious pickle brine! In a pot, combine soy sauce, sugar, and water in a 1:1:1:1 ratio and bring to a boil over high heat. As soon as the mixture starts to boil vigorously, turn off the heat. Adding the vinegar at this stage will help preserve its tangy flavor and aroma.
Step 5
Place the sliced celery and chili peppers into a sterilized glass jar. Pour the hot pickle brine (with vinegar added) over them. Let it sit at room temperature for one day, then refrigerate for another day to allow the flavors to meld. Your crispy, sweet, and tangy celery pickles will be ready! While they are delicious right away, refrigerating them will allow the flavors to deepen beautifully.
