  • 1.5 Tbsp sugar
  • 2 Tbsp cooking wine (mirin)

  • 2 Tbsp oligosaccharide
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds

Gently scrape the skin off the fresh burdock root using the back of a knife. Wash it thoroughly under running water and slice it diagonally into bite-sized pieces. Slicing them not too thinly will help maintain a pleasant texture after braising.
