Main Ingredients

  • Radish 240g (about 1/4 of a medium radish)
  • Green onion (white part) 5cm

Seasoning Ingredients

  • Gochugaru (Korean chili flakes) 45g (approx. 3 Tbsp)
  • Anchovy sauce 45g (approx. 3 Tbsp)
  • Brown sugar 15g (approx. 1 Tbsp)
  • Minced garlic 10g (approx. 1 tsp)
  • Plum extract 15ml (approx. 1 Tbsp)
  • Sesame seeds (toasted) a pinch

Cooking Instructions

Step 1

First, wash the radish thoroughly, peel it, and julienne it into thin strips about 2-3mm thick. Place the julienned radish in a bowl and toss with gochugaru (Korean chili flakes) until evenly coated. Coating with chili flakes first helps prevent the radish from becoming too soggy and allows the seasoning to adhere better.

Step 1

Step 2

Let the radish, coated with gochugaru, sit for about 10 minutes. This allows the radish to wilt slightly, releasing some of its moisture and contributing to a crispier texture.

Step 2

Step 3

Now, prepare to mix in the seasonings. After 10 minutes, without draining the liquid released from the radish, add all the seasoning ingredients: anchovy sauce, brown sugar, minced garlic, and plum extract.

Step 3

Step 4

After adding the prepared seasoning ingredients, gently mix everything together with your hands, ensuring the seasoning is evenly distributed onto the radish. Avoid mixing too vigorously, as this can make the radish mushy. Mix gently as if you are kneading.

Step 4

Step 5

Finally, thinly slice the green onion and prepare a pinch of toasted sesame seeds. Sprinkle the minced green onion and sesame seeds over the mixed radish salad to complete your delicious Musaengchae!

Step 5

Step 6

Transfer the finished radish salad to a serving bowl. Now, you can serve it immediately and enjoy its wonderful taste. Freshly made radish salad is truly exceptional!
