This recipe combines the satisfying crunch of toast with the creamy richness of a perfectly cooked egg, enhanced by savory tomato sauce and melted cheese. It’s a delightful way to elevate your breakfast or brunch game. This particular batch had a bit of a ‘toasted surprise’ from the air fryer, giving it an extra crispy texture that’s uniquely delicious!
Ingredients
- 2 slices of bread (preferably slightly thick-cut)
- 1 fresh egg
- 1 slice of cheddar cheese (can substitute with mozzarella)
- 2 Tbsp tomato sauce
- A pinch of dried parsley flakes (for garnish)
Cooking Instructions
Step 1
Start by preparing one slice of bread. Use a glass cup or cookie cutter to carefully cut out a circle from the center of the bread, creating a hole. This well will hold the egg beautifully.
Step 2
Place the bread with the hole on top of the other whole slice of bread. Gently press down around the cut-out area with your fingers or the back of a spoon. This creates a slightly deeper well, ensuring the egg stays put when you add it.

Spread about 2 tablespoons of tomato sauce evenly over the bread base. Be careful not to use too much, as it can make the toast soggy. Aim for a thin, even layer.
Step 4
Place the cheddar cheese slice over the tomato sauce. Then, carefully top it with the bread that has the hole. Now, gently crack the fresh egg into the hole. Try not to break the yolk!
Step 5
Finally, sprinkle a pinch of dried parsley flakes over the top for a touch of color and aromatic flavor. It makes the toast look even more appealing.
Step 6
Now it’s time for the air fryer! I initially set it at 170°C (340°F) for 12 minutes, but the yolk wasn’t fully cooked. I then tried 180°C (355°F) for another 5 minutes, which resulted in it getting a little too dark. My recommendation is to stick to 170°C (340°F) and check after about 10-12 minutes, adjusting as needed for your air fryer. Despite the slight char, it turned out wonderfully crispy and delicious!
