Ingredients- 1 handful blanched lotus root
- 2 cucumbers
- 1/4 tsp sea salt
- 5 Tbsp mayonnaise
- 1 Tbsp plum extract (maesil cheong)
- A little toasted sesame seeds

Step 1
Wash the 2 cucumbers thoroughly. You can peel them, or simply rub them gently with coarse salt before washing. Cut the cucumbers in half, then slice them diagonally about 5mm thick. This slicing method helps the dressing penetrate better, making them more flavorful.
Step 2
Place the sliced cucumbers in a bowl and add 1/4 tsp of sea salt. Gently mix and let them sit for 10 minutes to salt. The cucumbers will release moisture. Use them as they are; do not rinse them! This salting process makes the cucumbers wonderfully crisp.
Step 3
Peel the lotus root and blanch it in boiling water. Adding a little vinegar to the water can help maintain a cleaner color, but it’s also fine to blanch it without. (Duri Moon’s lotus root had some slight discoloration, but it didn’t affect the taste at all!) Cut the blanched lotus root into bite-sized pieces, about 1cm thick. Add the sliced lotus root to the bowl with the salted cucumbers. ***Tip: For an even better texture, chill the blanched lotus root in the refrigerator for a while before making the salad.
Step 4
Now it’s time to add the creamy dressing. Generously add 5 tablespoons of mayonnaise. This will add a smooth, rich, and savory element, enhancing the salad’s overall flavor.

Add 1 tablespoon of plum extract (maesil cheong) for a sweet and tangy flavor. Plum extract helps to cut through any earthy notes from the lotus root and adds a delicious umami.
