Perfect as a side dish or a delightful snack, these sweet potato pancakes are a must-try!
Key Ingredients- 1 medium sweet potato
- All-purpose flour (or tempura flour for extra crispiness)
- Cold water
- 1 egg
- Dried parsley flakes
- Vegetable oil (like brown rice oil) for frying
Cooking Instructions
Step 1
Begin by thoroughly washing your sweet potato. You can peel it or leave the skin on, as you prefer. Slice it into approximately 5mm thick rounds or cut it into bite-sized pieces. Soak the sliced sweet potato in cold water for about 10 minutes to remove excess starch, then drain well. This step helps achieve a crispier texture.
Step 2
Now, let’s prepare the batter that will make your sweet potato pancakes wonderfully crispy. Combine tempura flour (or all-purpose flour) and cold water in a 1:1 ratio. For about two medium-sized sweet potatoes, using roughly 1.5 tablespoons each of flour and water (measured by a ladleful) usually creates the right consistency. Aim for a batter that’s neither too thin nor too thick. (Tip: Using ice water or cold sparkling water can enhance the crispiness of the coating.)
Step 3
Crack one fresh egg into the prepared batter and mix it well. The egg adds a lovely richness and a tender texture to the batter. Whisk until there are no lumps and everything is smoothly combined.
Step 4
Add a pinch of dried parsley flakes to the batter for a subtle herbal aroma and a hint of color, then gently stir. Now, dip the drained sweet potato slices into this batter, ensuring each piece is evenly coated. A thin, even coating is ideal.
Step 5
Finally, heat a generous amount of vegetable oil (or brown rice oil) in a frying pan over medium heat. Once the oil is hot enough, carefully place the batter-coated sweet potato slices into the pan, making sure they don’t overcrowd it. Fry them for about 3-4 minutes per side, or until they are golden brown and deliciously crispy on both sides. Enjoy your perfectly crispy on the outside and tender on the inside sweet potato pancakes!
