Seasoning

  • 1.5 Tbsp chopped green onion
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 tsp minced garlic
  • 1 Tbsp toasted sesame seeds
  • 1 tsp sesame oil

The key to this dish is good quality oi! Prepare your oi by making it yourself from Baekdadagi cucumbers, or use conveniently packaged store-bought oi.

Slice the prepared oi thinly. Rinse them briefly under cold water just once to remove any surface impurities without losing too much flavor. Drain them well.

Place the sliced oi into a cheesecloth, a fine mesh bag, or even a clean piece of traditional Korean fabric (like those used for making broth). Squeeze out as much water as possible. This step is crucial for achieving that desirable crispy and chewy texture.

Add all the seasoning ingredients to the squeezed oi: chopped green onion, minced garlic, gochugaru, toasted sesame seeds, and sesame oil. Mix them together. (Tip: The homemade oi I used already had sugar and vinegar incorporated during the pickling process, so I didn’t add extra. If you are using store-bought oi, or prefer a sweeter or tangier taste, feel free to add sugar and vinegar according to your personal preference.)

Gently mix and toss everything together with your hands, ensuring the seasonings are evenly distributed throughout the oi. Continue mixing until the flavors meld beautifully. You’ll achieve a wonderfully crispy yet chewy seasoned cucumber dish! It’s delicious served immediately or can be stored in the refrigerator for a convenient side dish.
