Hello everyone! Today, we’re going to make a beloved ‘Gamjachaejeon’ using fresh, seasonal potatoes. Its crispy exterior and chewy interior make it a fantastic late-night snack or a simple side dish.

First, prepare 6 potatoes. The key to a great Gamjachaejeon is thinly sliced potatoes. Use a knife or a mandoline slicer to cut the potatoes into the thinnest, finest shreds possible. Importantly, do not rinse the shredded potatoes in water to remove the starch. Keeping the starch helps the batter become chewier and gives the finished pancake a much better texture.

Now, let’s mix the batter. In a mixing bowl, add the thinly shredded potatoes. Then, add 1 teaspoon of salt and 2 tablespoons of pancake mix. If you enjoy a bit of spice, finely chop 4 Cheongyang peppers (seeds removed) and add them to the mix.
