Irresistible Snack: Dried Filefish with Butter

  • 5 sheets dried filefish (Gwipo)
  • 5 cloves whole garlic
  • 100g unsalted butter
  • 1 Tbsp dried parsley flakes
  • 1 Tbsp cooking wine (Mirin or similar)
  • 1 Tbsp corn syrup (or honey)

  • 500g fresh spring cabbage (Bomdong)
  • 1/2 medium onion
  • 1 green chili pepper (optional, for spice)
  • 1 red chili pepper (for color)

Spring Cabbage Salad Dressing

  • 2 Tbsp gochugaru (Korean chili powder)
  • 2 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp minced garlic
  • 1 tsp minced ginger
  • 1/2 tsp sugar
  • 1/4 cup water (approx. 50ml)

First, let’s prepare the dried filefish with butter! Use scissors to cut the dried filefish into bite-sized pieces that fit comfortably in your air fryer basket. Avoid cutting them too small, as they might become too hard when cooked.

Peel the whole garlic cloves and thinly slice them. The pungent aroma of garlic will blend beautifully with the butter, adding a wonderful depth of flavor.
