Main Ingredients

  • 1/2 Onion
  • 1/3 Carrot
  • 1 Potato
  • 6 Imitation Crab Sticks (Kani Kama)
  • Cooking Oil (for deep-frying)

Tempura Batter

  • 1.3 cups Tempura Flour
  • 1 cup Cold Water
  • Pinch of Salt

Cooking Instructions

Step 1

First, shred the imitation crab sticks by hand along their natural lines. Wash the onion, carrot, and potato, then peel them. Julienne them into thin strips, perfect for frying. Ensuring all vegetables are cut to a similar thickness will help them cook evenly.

Step 1

Step 2

In a bowl, combine the tempura flour (1.3 cups), cold water (1 cup), and a pinch of salt. Whisk gently with chopsticks to create the batter. Avoid overmixing, as this can develop gluten and make the tempura tough; the key is to mix just until the dry flour disappears. Add the julienned vegetables and shredded crab sticks to the batter and toss gently to coat all ingredients evenly.

Step 2

Step 3

Heat a deep pot or deep fryer with cooking oil to 170°C (340°F). Carefully drop spoonfuls of the batter-coated ingredients into the hot oil. To shape them nicely, use a ladle or large spoon to scoop the mixture and then gently push the ingredients off with chopsticks into the oil. Don’t overcrowd the pot, as this will lower the oil temperature and result in less crispy tempura.

Step 3

Step 4

While frying, gently stir the tempura with tongs or chopsticks to prevent them from sticking together. Fry for about 3-5 minutes, or until they are a beautiful, golden-brown color on all sides. Once golden and crisp, remove the tempura from the oil and drain on a wire rack to remove excess oil, ensuring maximum crispiness. Your delicious crab stick vegetable tempura is now complete! Serve immediately while warm for the best texture and flavor.
