Carrot Rape Salad- 1 carrot
- Salt, to taste
- 1 Tbsp sugar
- 1 Tbsp olive oil (can add more to taste)
- 1 Tbsp whole grain mustard
- 1 Tbsp lemon juice
Cooking Instructions
Step 1
Start by preparing one whole carrot. Wash it thoroughly under running water without peeling.
Step 2
Using a mandoline slicer or a knife, cut the carrot into thin, long julienne strips. Uniform thickness is key for consistent texture.

Sprinkle a pinch of salt over the julienned carrots and let them sit for about 10 minutes. This step helps draw out some moisture, resulting in a crispier and chewier texture.

While the carrots are marinating, let’s make the dressing. In a small bowl, combine 1 tablespoon of sugar and 1 tablespoon of olive oil. Feel free to adjust the amount of olive oil to your preference for a richer flavor.

Add 1 tablespoon of whole grain mustard and 1 tablespoon of lemon juice to the bowl. Whisk everything together with a fork or spoon until well combined and the dressing is smooth.

After about 10 minutes, the carrots will have released some liquid. You don’t need to drain this liquid; simply pour the prepared dressing directly over the carrots.
