Main Ingredients
  • 1 stick Mokwoochan Ttuksim (Ham)
  • 2 fresh eggs
  • A pinch of dried parsley flakes
  • 30g all-purpose flour (approx. 2 Tbsp)
  • 30g mild curry powder (approx. 1.5 Tbsp)

Cooking Instructions

Step 1

First, prepare the Mokwoochan Ttuksim. Cut the ham into bite-sized, substantial pieces, like large cubes or squares that are easy to eat in one bite. Avoid cutting them too small, as they might fall apart during frying; cutting them slightly thick is recommended.

Step 2

Now, let’s make the batter. In a clean resealable plastic bag (or a wide bowl), combine 30g of all-purpose flour and 30g of curry powder. Shake the bag or stir the contents until the powders are thoroughly mixed without any clumps. You can adjust the amount of curry powder according to your preference.

Step 3

Add the cut Ttuksim pieces into the flour and curry powder mixture from Step 1. Seal the opening of the plastic bag securely and gently shake it, being careful not to break the ham pieces. Ensure all sides are thinly and evenly coated with the powder mixture. Applying a thin coating is key; a thick layer can result in a bitter taste when fried.

Step 4

Prepare the egg wash. In a separate bowl, crack 2 fresh eggs and add a pinch of dried parsley flakes. Whisk the eggs thoroughly with a fork or whisk until the yolks and whites are well combined. Parsley adds a fragrant note and also enhances the visual appeal.

Step 5

Dip the Ttuksim pieces, now coated with the curry powder mixture, into the prepared egg wash. Gently stir to ensure the ham pieces are fully submerged in the egg mixture, then let them sit for a moment so the egg wash coats the ham evenly.

Step 6

Now for the frying stage. Heat a frying pan over medium heat and add a generous amount of cooking oil. Carefully place the egg-coated Ttuksim pieces into the hot oil, ensuring they don’t stick together by leaving some space between them. Fry until one side is golden brown, then flip to the other side and continue frying, flipping occasionally, until both sides are evenly golden and crispy. It’s important to fry until the exterior is nicely crisp.

Step 7

Your crispy and delicious Curry-Fried Ttuksim is now ready! Serve them beautifully on a plate while warm, and they’ll be a delightful snack or lunchbox item that captures both the eyes and taste buds of children. They are also delicious served with ketchup or mustard.
