Ingredients

  • 300g anchovies (small or medium size)
  • 2 Tbsp olive oil
  • 1 Tbsp minced garlic
  • 1 Tbsp sugar
  • 2 Tbsp mirin (rice wine)
  • 1 packet mixed nuts (approx. 50-100g)
  • 1 tsp corn syrup or honey

Cooking Instructions

First, prepare your anchovies. Using small anchovies will result in a crispier texture. Heat 2 tablespoons of olive oil in a frying pan over low heat. Add the anchovies and stir-fry gently. This step helps to remove any fishy smell and enhance their nutty flavor. Stir continuously for about 2-3 minutes, being careful not to burn them.

Once the anchovies are lightly toasted, add 1 tablespoon of sugar. Continue to stir-fry over low heat. It’s crucial to maintain a low temperature, especially if your anchovies are thin or your pan is very hot, to prevent them from burning quickly. Mix well as the sugar melts and coats the anchovies, making them deliciously sweet.

Now, add 1 tablespoon of minced garlic. Sauté the garlic until it becomes fragrant and lightly golden brown. The garlic will infuse the anchovies with a rich aroma, creating that signature savory scent of stir-fried anchovies. Keep stirring to ensure the garlic cooks evenly and doesn’t burn.

Stir everything together for a moment to ensure it’s well combined. Then, add your packet of mixed nuts. Gently mix them into the anchovies. Avoid over-stirring or cooking for too long at this stage, as it can make the nuts lose their crunch. Finally, pour in 2 tablespoons of mirin for a glossy finish and 1 teaspoon of corn syrup or honey to adjust the sweetness and consistency. Your delicious stir-fried anchovies with nuts are now ready – a perfect accompaniment to rice!
