Place the rinsed chickpeas in a bowl and generously cover them with water, using about twice the volume of the beans. Let them soak for at least 5-6 hours, or preferably for half a day to a full day. Soaking them overnight is a convenient option for the next day’s cooking.

You’ll notice that the soaked chickpeas have become plump, roughly doubling in size compared to their dried state.

Drain the soaking water from the chickpeas and place them in a colander to allow excess water to drain off completely.
