First, for this recipe, we’ll be using the potatoes with their skin on. Therefore, it’s important to thoroughly wash the potatoes under running water using a brush to ensure no dirt remains on the skin. Cooking with the skin on makes them more flavorful and nutritious.

Now it’s time to slice the potatoes into an accordion shape. To prevent the potatoes from rolling, place two wooden chopsticks evenly on either side. This way, the knife will stop when it hits the chopsticks, preventing you from slicing all the way through to the bottom. Using the chopsticks as a guide, slice thinly about 3-5mm apart.

Next, let’s make the delicious seasoning to brush onto the potatoes. In a small bowl, add 1-2 teaspoons of butter and microwave for about 10 seconds until melted and soft. Add 1/2 teaspoon of salt and 1 teaspoon of parsley flakes to the melted butter and mix well. That’s it for the Accordion Potato seasoning! Now, carefully brush this mixture between each slice of the potatoes.
