Gimbap Ingredients- 2 sheets of gimbap seaweed (nori)

- 1 fresh cucumber
- 3 fresh eggs
Egg Omelet Seasoning- 1 Tbsp Tsuyu (a savory soy-sauce based seasoning)
- 1 Tbsp Mirin (sweet cooking wine, for removing odor and adding tenderness)
- Pinch of black pepper (to taste)
Cucumber Pickling- 2 Tbsp vinegar
- 1 Tbsp sugar
- 0.5 Tbsp salt
- 1 Tbsp Tsuyu (a savory soy-sauce based seasoning)
- 1 Tbsp Mirin (sweet cooking wine, for removing odor and adding tenderness)

Step 1
First, let’s begin by gathering all the necessary ingredients to create our delicious carrot rapé keto gimbap. Using fresh ingredients will significantly enhance the final taste of your gimbap.

Wash the fresh cucumber thoroughly and slice it into thin julienne strips. In a bowl, combine the julienned cucumber, 2 Tbsp of vinegar, 1 Tbsp of sugar, and 0.5 Tbsp of salt. Gently mix, then let it sit for about 10 minutes, allowing the cucumber to soften and pickle.

Once the cucumber is softened, place it in a cheesecloth or a clean kitchen towel. Squeeze out as much liquid as possible by pressing firmly. This step is crucial to prevent the cucumber filling from becoming soggy and to maintain its satisfying crunch.
