The Secret to Non-Crumbly Sausage and Potato Stir-Fry: Salting the Potatoes First!
Sausage and potatoes – a foolproof combination! While delicious when simmered in a sauce, this recipe focuses on bringing out the natural potato flavor by stir-frying with just salt. By salting the potatoes beforehand, they stay firm and intact even after prolonged cooking. We use the natural brine released from the potatoes during the salting process to cook them, so you won’t need much extra seasoning. Main Ingredients- 2-3 Potatoes (approx. 250g)
- 4 Sausages (approx. 200g)
Seasoning (using standard Korean rice spoon)- 2 Tbsp Cooking Oil
- 0.2 Tbsp Fine Salt
- 0.5 Tbsp Minced Garlic
- Pinch of Black Pepper

Cooking Instructions
Step 1
First, peel the potatoes thoroughly. Prepare about 200g of sausages.

Cut the peeled potatoes into bite-sized pieces, about the length of your index finger, and place them in a bowl. Add 0.2 Tbsp of fine salt, toss well to coat, and let them sit for about 20 minutes to salt.

Tip: The saltiness of sausages can vary by brand. Salting the potatoes draws out their moisture, making them firmer and preventing them from breaking apart during cooking. If you find it’s not salty enough, you can add more salt while stir-frying. So, starting with just 0.2 Tbsp of salt is usually sufficient.

Cut the sausages into pieces similar in size to the potatoes. Place the cut sausages in a colander and pour boiling water over them to remove excess grease and additives. This step helps achieve a cleaner taste.

After 20 minutes, you’ll notice that the potatoes have released quite a bit of liquid. Don’t discard this briny liquid; we’ll use it when stir-frying to enhance the potatoes’ flavor and moisture!

Now, let’s start cooking! Heat 1 Tbsp of cooking oil in a pan over medium heat and add the prepared sausages. Stir-fry until they are nicely browned on all sides.

Once the sausages are golden brown and appetizing, add the salted potatoes, along with their released liquid, directly into the pan.

Add another 1 Tbsp of cooking oil and the 0.5 Tbsp of minced garlic. Stir everything together well. Then, cover the pan with a lid, reduce the heat to medium-low, and let the potatoes cook gently until they are tender all the way through.

The key is to cook them more like steaming than active stir-frying! Cover and let them cook, stirring gently only once or twice in between to ensure even cooking. They are ready when a fork pierces them easily.
Step 10
This cooking process usually takes about 5 to 10 minutes. If you notice the bottom of the pan starting to burn, add a tiny bit of water to prevent sticking.

Check if the potatoes are fully cooked. Adjust the seasoning with salt to your preference. Finish with a sprinkle of freshly ground black pepper for a delicious Sausage and Potato Stir-Fry!
