Main Ingredients- 1 Korean cucumber (gasio-i)
- 1/4 onion
Cooking Instructions
Step 1
First, prepare 1 Korean cucumber (gasio-i). Lightly peel the tough skin with a peeler, then slice it diagonally about 0.5 cm thick. Cut each slice in half lengthwise for better seasoning absorption. Thinly slice 1/4 onion.
Step 2
In a bowl, combine the sliced cucumber and onion. Add 1/2 Tbsp of salt and gently toss to coat. Salting the cucumber draws out its moisture, helping to maintain its crispness.
Step 3
Let the cucumber marinate in salt for about 20 minutes. You’ll notice that the salt dissolves and a significant amount of water is released from the cucumber.
Step 4
Lightly rinse the salted cucumber under cold running water. Be gentle to avoid washing away the cucumber’s flavor. After rinsing, drain thoroughly in a colander to remove as much water as possible. Excess water can dilute the dressing.
Step 5
To the drained cucumber and onion, add 1.5 Tbsp of red pepper flakes and mix well. The red pepper flakes will give the cucumber a beautiful color and a touch of spiciness.
Step 6
Finally, add 1 Tbsp soy sauce for soup, 2 Tbsp vinegar, 1 Tbsp plum extract, 0.5 Tbsp minced garlic, 1 Tbsp sesame seeds, and 0.5 Tbsp sesame oil. Mix everything thoroughly until well combined. Ensure the sweet, sour, and savory dressing evenly coats the cucumber for a delicious result. You can enjoy it immediately, or chill it in the refrigerator for an even more refreshing taste!
