  • 200g daikon radish

Pickling Liquid

  • Water (enough to cover onions)
  • 1 ice cube
  • 1 tsp vinegar (for soaking)
  • 2.5ml salt (for radish)
  • 5ml sugar
  • 15ml vinegar
  • 2.5ml minced garlic
  • A pinch of dried parsley

Cooking Instructions

Step 1

Thinly slice 1 medium red onion (about 200g) into slivers. Place the sliced onions in a bowl with 1 ice cube and 1 teaspoon of vinegar, and let them soak for 10 minutes. This step helps to mellow the onion’s sharpness and enhance its crispness. After 10 minutes, drain them thoroughly in a colander.

Julienne 200g of daikon radish to match the length of the onion slivers. In a separate bowl, toss the julienned radish with 2.5ml of salt. Mix well and let it sit; we will use the moisture released by the radish. This salting process helps to draw out excess water and makes the radish crispier.

Combine the drained red onion slivers and the salted daikon radish in a larger bowl. Add 2.5ml of minced garlic, 5ml of sugar, 15ml of vinegar, and a pinch of dried parsley. Gently mix everything together until well combined, ensuring the seasonings are evenly distributed.
