Easy Radish Salad Recipe Using Plum Extract
This radish salad is made simply with sweet plum extract instead of vinegar and sugar. It offers a less sharp, more comforting, and subtly captivating flavor compared to using sugar and vinegar. Enjoy the refreshing crunch and naturally enhanced taste.
Ingredients- 500 grams prepared radish
- 2 Tbsp chili powder (fine)
- 1/2 Tbsp salt
- 6-7 Tbsp plum extract
- 1 tsp minced garlic
- 1 tsp chopped green onion
- Shrimp paste brine (or salt) to taste
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare 500 grams of radish. Using a mandoline slicer or a sharp knife, julienne the radish into matchsticks that are not too thin, ensuring it retains a crisp texture. The thickness of the julienned radish will affect the final crunch, so adjust to your preference.
Step 2
Add 2 tablespoons of fine chili powder to the julienned radish and mix gently to coat it evenly, giving it a vibrant color. If you don’t have fine chili powder, you can sift regular chili powder through a fine-mesh sieve to prevent clumping and achieve a beautiful hue.
Step 3
Now it’s time for seasoning. Add 1 teaspoon of minced garlic, 1/2 tablespoon of salt, and 6-7 tablespoons of sweet plum extract, which will serve as your sweetener and acidifier instead of sugar and vinegar. Mix gently until well combined. You can adjust the amount of plum extract based on the radish’s natural sweetness and your personal taste for a more balanced flavor.
Step 4
Add 1 teaspoon of chopped green onion and mix again. Taste the salad and adjust the seasoning by adding shrimp paste brine or a bit more salt if needed. Using shrimp paste brine will add an extra layer of savory umami.
Step 5
Sprinkle a pinch of sesame seeds over the mixed radish salad for a nutty aroma and flavor. Lightly rub the sesame seeds between your palms before sprinkling to release more of their fragrance.
Step 6
Transfer the finished radish salad into an airtight container and store it in the refrigerator. While you can enjoy it immediately, letting it chill and meld for 1-2 hours in the refrigerator will allow the flavors to deepen and develop beautifully. This versatile side dish is perfect with rice or as a topping for bibimbap.
