Main Ingredients- 3 Crisp Green Peppers
Seasoning Ingredients- 1 Tbsp Doenjang (Korean fermented soybean paste)
- 1 Tbsp Scallions (finely chopped)
- 1 Tbsp Minced Garlic
- 1 Tbsp Perilla Oil
- 1 Tbsp Corn Syrup (or rice syrup)
- Sesame Seeds to taste
- 1 Tbsp Doenjang (Korean fermented soybean paste)
- 1 Tbsp Scallions (finely chopped)
- 1 Tbsp Minced Garlic
- 1 Tbsp Perilla Oil
- 1 Tbsp Corn Syrup (or rice syrup)
- Sesame Seeds to taste
Cooking Instructions
Step 1
First, prepare 3 crisp green peppers and about 10 cm (4 inches) of scallions. Doenjang-seasoned green peppers are best enjoyed immediately after preparation, so it’s recommended to mix them just before serving for maximum freshness.
Step 2
Cut the prepared green peppers into bite-sized pieces. In the photo, they are cut into 2 pieces, but cutting them into 3 pieces is also perfectly fine, depending on your preference. Be mindful not to cut them too small, as this can diminish their crispiness.
Step 3
Wash the scallions thoroughly and then finely chop them. Finely chopped scallions will add depth of flavor to the seasoning.
Step 4
Now, let’s make the delicious seasoning! In a bowl, add 1 tablespoon of corn syrup and 1 tablespoon of doenjang. You can use homemade or store-bought doenjang, but if you’re using a particularly salty doenjang, adjust the amount accordingly.
Step 5
Next, add 1 tablespoon of minced garlic. The garlic aroma will blend with the doenjang to create a richer flavor.
Step 6
Finally, add 1 tablespoon of perilla oil for a nutty aroma. While sesame oil can be used as a substitute, the unique fragrance of perilla oil pairs exceptionally well with green peppers.
Step 7
Add half of the chopped scallions to the seasoning mixture and mix lightly. Dividing the scallions and adding them in stages helps control their texture and flavor distribution.
Step 8
Add the cut green peppers to the seasoning. Gently toss them to ensure the doenjang coats the peppers evenly. Be careful not to overmix, as this can make the peppers mushy.
Step 9
Add the remaining chopped scallions and mix again gently. This step helps retain the fresh texture of the scallions.
Step 10
Finally, sprinkle with sesame seeds for a visually appealing finish and nutty flavor. Your crisp green pepper doenjang salad is ready! Serve it on top of warm rice and enjoy.
