Main Ingredients- 3 cucumbers (medium-sized)
- 1/2 bell pepper (use various colors for a prettier look)
- 1/2 Tbsp coarse salt (for cleaning cucumbers)
Pickling Brine (Seasoning)- 2 cups water (400ml)
- 1 cup vinegar (200ml)
- 1 cup sugar (200g)
- 1/3 Tbsp salt (3g)
- 1/2 Tbsp pickling spice (optional, can be omitted)

Cooking Instructions
Step 1
Thoroughly wash the fresh cucumbers using coarse salt, scrubbing even the bumpy parts of the skin. After washing, pat them dry. Slice them into your preferred thickness, about 1-1.5cm rounds or lengthwise cuts. Prepare the bell pepper by removing the seeds and slicing it into similar-sized pieces. Using different colored bell peppers will make your pickles look more appealing.
Step 2
Sterilize your glass jars by boiling them in hot water or thoroughly washing and drying them. Place the prepared cucumbers and bell peppers attractively into the sterilized jars. If you have too many ingredients for one jar, feel free to divide them between two.
Step 3
In a saucepan, combine all the pickling brine ingredients: 2 cups water, 1 cup vinegar, 1 cup sugar, and 1/3 Tbsp salt. The golden ratio is ‘water:vinegar:sugar = 2:1:1’. Pickling spice adds a wonderful aroma, but it’s perfectly fine to skip if you don’t have it.
Step 4
Place the saucepan over medium heat and bring the brine to a rolling boil, stirring until the sugar has completely dissolved. Once all ingredients are well combined and the sugar is dissolved, turn off the heat.
Step 5
Strain the hot brine through a sieve to remove any whole pickling spice pieces. (Only if you added pickling spice).
Step 6
Carefully pour the steaming hot brine over the vegetables in the prepared jars, ensuring they are fully submerged. Pouring the brine while it’s hot helps maintain the crispness of the vegetables and extends their shelf life.
Step 7
