Here’s a recipe for fresh and crunchy cucumber and chive kimchi (geotjeori) that’s perfect for when you want a quick, refreshing side dish, especially during the summer months. Main Ingredients- 3 Korean cucumbers
- 200g chives
- 1/2 onion
- 2 Korean chili peppers (Cheongyang)
Seasoning- 1/2 cup Gochugaru (Korean chili flakes)
- 3 Tbsp fish sauce
- 1 Tbsp minced garlic
- 1 Tbsp plum extract (Maesil Cheong)
- 1/2 cup kelp broth (Dashima Yuksu)
- A pinch of toasted sesame seeds
- 1/2 cup Gochugaru (Korean chili flakes)
- 3 Tbsp fish sauce
- 1 Tbsp minced garlic
- 1 Tbsp plum extract (Maesil Cheong)
- 1/2 cup kelp broth (Dashima Yuksu)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, wash all the vegetables thoroughly under running water. If the skin of the Korean cucumbers is tough, you can peel off the outer layer using a vegetable peeler for a softer texture.
Step 2
Cut the prepared cucumbers lengthwise into 4 pieces, then slice them into bite-sized pieces, about 1.5 cm thick. Wash the chives, drain them well, and cut them into lengths similar to the cucumber pieces. Thinly slice the onion and finely chop the Korean chili peppers.
Step 3
Sprinkle 1 Tbsp of coarse salt evenly over the sliced cucumbers and let them salt for about 20 minutes. Once the cucumbers are softened, rinse them lightly under running water to remove excess salt, then drain them thoroughly in a colander. Be careful not to squeeze the cucumbers too hard, as this can diminish their crispiness.
Step 4
In a bowl, combine the gochugaru, fish sauce, minced garlic, plum extract, and kelp broth, mixing well to create the seasoning paste. First, add the drained cucumbers to the seasoning paste and gently toss to coat. Then, add the chives, onion, and Korean chili peppers. Gently mix everything together, being careful not to mash the vegetables, ensuring the seasoning is evenly distributed.
Step 5
Finally, sprinkle toasted sesame seeds over the kimchi. Your delicious cucumber and chive kimchi is now ready! It’s great to eat right away, or you can store it in the refrigerator to enjoy it cool.
