When you’re feeling tired and your immunity is low, it’s important to enjoy delicious food to lift your spirits! This recipe uses a variety of vegetables from your fridge to create a nutritious bean sprout japchae. Its refreshing crunch and rich flavor make it a perfect side dish for lunch boxes or a special occasion meal.
Main Ingredients- 1/2 bag bean sprouts (approx. 100g)
- 2 sheets fish cake (ob KQkq)
- 1/2 onion
- 1 king oyster mushroom
- 5 roots spinach (approx. 50g)
- 5 Korean chili peppers (gkwari gochu)
- A little carrot
- A little green onion
Seasoning- 1/2 Tbsp minced garlic
- 2 Tbsp oyster sauce
- 1/2 Tbsp minced garlic

Cooking Instructions
Step 1
First, thoroughly prepare all the ingredients for the japchae. Rinse the bean sprouts under running water and drain them. Slice the fish cake into bite-sized pieces. Thinly julienne the onion and king oyster mushroom. Trim the roots of the spinach and wash it clean. Remove the stems from the Korean chili peppers and cut them in half lengthwise. Julienne the carrot and green onion finely. Cutting all ingredients into uniform sizes will ensure they cook evenly.
Step 2
Having all your julienned ingredients prepped and ready before you start stir-frying will make the cooking process much smoother. This is especially helpful when stir-frying multiple vegetables, as their cooking times can vary; preparing them beforehand allows you to add them in the correct order.
Step 3
Heat a large pan over medium heat and add 1-2 Tbsp of cooking oil. Sauté the green onion and minced garlic until fragrant. Once the aroma of the green onion and garlic is released, add the julienned onion and carrot. Stir in the oyster sauce and cook for a moment, stirring once, until the onion becomes translucent.
Step 4
Now, add the bean sprouts and fish cake. Stir-fry quickly over high heat. Be careful not to overcook the bean sprouts, as you want to maintain their crisp texture. Stir-frying the fish cake along with the vegetables will add to the overall savory flavor.
Step 5
Add the prepared Korean chili peppers and stir-fry together. Lightly cooking the chili peppers will preserve their slightly spicy kick and crispness, enhancing the overall flavor of the japchae. If you prefer more heat, you can remove the seeds from the chili peppers before adding them.
Step 6
Check to ensure all the ingredients are well combined and stir-frying nicely. Keep tossing the ingredients occasionally to prevent them from sticking together.
Step 7
Finally, add the washed spinach and stir quickly until just wilted – you’re done! Spinach is delicate and wilts very quickly, so it’s best to add it right before turning off the heat and just mix it gently. This method helps preserve the spinach’s nutrients and its crisp texture.
