Main Ingredients

  • 2 handfuls fresh bean sprouts (approx. 200g)
  • 1 king oyster mushroom (or 100g of your preferred mushrooms)
  • 4 red chili peppers (optional)

Seasoning & Others

  • Pinch of salt (to taste)
  • Pinch of black pepper (to taste)
  • 2 tbsp olive oil

Cooking Instructions

Step 1

First, gently rinse the fresh bean sprouts under running water and pat them dry. Trim the ends of the king oyster mushroom and slice it into bite-sized pieces or thin slices. If using other mushrooms, clean and prepare them similarly. If you like a bit of heat, deseed the red chili peppers and finely mince or crush them.

Heat 2 tablespoons of olive oil in a pan over medium-high heat. Add the prepared bean sprouts and stir-fry quickly for about 1 minute, just until they start to wilt but remain crisp. We want to retain their satisfying crunch.

Now, add the sliced king oyster mushrooms (or your chosen mushrooms) to the pan. Continue to stir-fry for another 2-3 minutes until the mushrooms are tender and slightly softened. Season with a pinch of salt and black pepper to your liking. It’s best to season lightly to allow the natural flavors of the ingredients to shine through.
