Refreshing & Sweet! Apple Crab Stick Cucumber Salad Recipe
A delightful salad featuring the perfect harmony of fresh apples, delicate crab sticks, and crisp cucumbers. Itβs wonderfully light and flavorful, making it an excellent choice for a quick snack or a vibrant brunch dish!
Main Ingredients
- 1 Cucumber (medium size)
- 100g Imitation Crab Sticks (krab meat)
- 4 Brazil Nuts
- 1 Apple (recommend an apple that is crisp and balances sweet and tart flavors)
Dressing Ingredients
- 6 Tbsp Mayonnaise
- 2 Tbsp Plain Yogurt (helps balance the richness of the mayonnaise)
- 2 Tbsp Oligodang (Korean corn syrup) (adjust to taste)
- 6 Tbsp Mayonnaise
- 2 Tbsp Plain Yogurt (helps balance the richness of the mayonnaise)
- 2 Tbsp Oligodang (Korean corn syrup) (adjust to taste)
Cooking Instructions
Step 1
Peel the cucumber using a vegetable peeler and then julienne it into approximately 0.5cm thick strips. Maintaining a crisp texture is key! Wash the apple, remove the core, and julienne it to a similar thickness as the cucumber. For the imitation crab sticks, gently shred them lengthwise along the grain.
Step 2
In a large bowl, combine the prepared cucumber, apple, and shredded imitation crab sticks. Roughly chop the Brazil nuts using the side of a knife or your preferred tool and add them to the bowl; their nutty flavor will enhance the saladβs aroma. Now, add all the dressing ingredients: mayonnaise, plain yogurt, and oligoλΉ. Using a spatula or spoon, gently mix everything together until well combined. Be careful not to overmix, as this can cause the ingredients to become mushy.
Step 3
Transfer the finished salad to a nice serving dish. Itβs that simple! For a more substantial meal, you can generously pile this salad onto bread to make delicious sandwiches. Itβs perfect as a meal replacement or a light, refreshing snack. Enjoy your meal! ^^
