  • 2 Tbsp Baking Soda (for washing apples)

  • 500ml Water
  • 500ml Apple Cider Vinegar
  • 300g Sugar (adjust according to apple sweetness)
  • 1 Tbsp Salt

Cooking Instructions

Prepare 4 fist-sized apples. First, fill a bowl with plenty of water, add 2 tablespoons of baking soda, stir well, and soak the apples for about 5 minutes. This process effectively removes pesticides and impurities. After 5 minutes, rinse the apples thoroughly under running water. Peel the carrot using a peeler and set it aside.

In a pot, combine 500ml of water and 500ml of apple cider vinegar in equal amounts. Add 300g of sugar for sweetness. You can adjust the amount of sugar based on the sweetness of your apples. If you prefer a tangier flavor, reduce the sugar; if you like it sweeter, increase it.

Stir with a spatula until the sugar is completely dissolved. Once dissolved, add 1 tablespoon of salt and stir again. Bring the mixture to a boil over high heat, let it bubble for 1-2 minutes to evaporate some of the alcohol, then turn off the heat and let it cool down completely. Hot brine can cook the ingredients, so ensure it’s fully chilled before use.

While the brine is cooling, prepare the washed apples. Pat them completely dry with paper towels. Cut each apple into 4 wedges. Then, carefully cut out and remove the core and seeds from each wedge.

It’s easier to slice the carrot if you first cut it in half lengthwise, then slice it to the desired thickness. Place the sliced apples and carrots in a bowl and gently toss them together.

Arrange the prepared apples and carrots snugly in a sterilized glass jar. Avoid filling the jar completely to the brim; leave a little space at the top. Then, pour the completely cooled brine over the ingredients, ensuring they are fully submerged.
