Anyone can follow this recipe with ease, so let’s get started!
Main Ingredients- 1 to 1.5 cucumbers (medium-sized)
- 1 onion (small-sized)
Seasoning Ingredients- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp vinegar
- 2.5 Tbsp soy sauce
- 1 Tbsp plum extract (or corn syrup/oligosaccharide)
- 1/2 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp sesame oil
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp vinegar
- 2.5 Tbsp soy sauce
- 1 Tbsp plum extract (or corn syrup/oligosaccharide)
- 1/2 Tbsp minced garlic
- 1 Tbsp sugar
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
First, trim off the very ends of the cucumbers and wash them thoroughly. You can peel them if you prefer a softer texture, then slice them thinly into rounds or semi-circles, about 0.3 cm thick. Peel and wash the small onion, then thinly slice it into shreds.
Step 2
Now, let’s make the delicious seasoning for your cucumber salad! In a bowl, combine the gochugaru, vinegar, soy sauce, plum extract, minced garlic, and sugar. Stir everything together well with a spoon until evenly mixed. Finally, drizzle in the sesame oil for extra aroma and flavor.
Step 3
Place the prepared sliced cucumbers and shredded onion into a large mixing bowl. Pour all the freshly made, flavorful seasoning over them.
Step 4
With clean hands, gently toss and mix the cucumbers, onions, and seasoning together until everything is well coated. Be careful not to mash the cucumbers; a gentle touch is key! Just a few moments of tossing, and your crisp, tangy-spicy Oi Muchim is ready to be enjoyed!
