Ingredients- 2 medium Carrots
- 3 Tbsp Olive Oil
- 1 Tbsp Sugar
- 1/2 Tbsp Salt
- 2 Tbsp Lemon Juice (freshly squeezed recommended)
- 1 Tbsp Whole Grain Mustard
Cooking Instructions
Step 1
First, wash and prepare 2 medium carrots. You can peel them or scrub them thoroughly if the skin is clean. Then, julienne the carrots into very thin strips. Using a mandoline slicer or a julienne peeler will make this process easier and ensure uniform strips. Thinly sliced carrots absorb the dressing better, resulting in a superior texture. : )
Step 2
Sprinkle 1/2 Tbsp of salt evenly over the thinly julienned carrots and let them sit for about 10 to 15 minutes. This step draws out excess moisture from the carrots, enhancing their crispiness. Gently toss the carrots once during this salting period for even results.
Step 3
In a small bowl, combine 3 Tbsp of olive oil, 1 Tbsp of sugar, 2 Tbsp of lemon juice, and 1 Tbsp of whole grain mustard. Whisk these ingredients together with a fork or a small whisk until well combined to create the dressing. Step 4
